Warm Beet & Citrus Salad

A beautiful and simple dish that supports your liver, digestion, and spring renewal. Beets support detoxification, citrus aids digestion, and the warmth of the dish is still comforting for cooler days.

Ingredients:

  • 2 medium beets, roasted and sliced
  • 1 orange, peeled and segmented
  • 1 tbsp olive oil
  • 1 tsp apple cider vinegar
  • Pinch of sea salt
  • Fresh mint or parsley (optional)

How to make it:

  1. Roast beets at 400°F for about 35–40 minutes, let cool slightly, remove the skin, then slice.
  2. Toss gently with orange segments, olive oil, vinegar, and salt.
  3. Garnish with fresh herbs if desired. Serve warm or room temp.
