Nourishing Winter Glow Soup
This cozy soup is perfect for January—warm, grounding, and packed with nutrients to support your wellness goals.
Ingredients:
1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
2 carrots, sliced
1 sweet potato, peeled and diced
1 cup red lentils, rinsed
4 cups vegetable broth
1 tsp turmeric
1 tsp cumin
Salt and pepper to taste
1 handful spinach or kale
Instructions:
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing until soft.
- Stir in carrots, sweet potato, turmeric, and cumin, cooking for 2-3 minutes.
- Add red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until vegetables and lentils are tender.
- Blend half the soup for a creamy texture, or leave it chunky if you prefer.
- Stir in spinach or kale until wilted. Season with salt and pepper.
- Serve warm and enjoy the nourishing goodness!
