Coconut Mango Ice Pops

Cool down with these naturally sweet, kid-approved Coconut Mango Ice Pops—made with only 3 simple ingredients. Light, creamy, and bursting with real mango, they offer a refreshing treat and a healthier alternative to store-bought frozen treats that the whole family can enjoy!

Ingredients

  • 1 14-oz can of light coconut milk
  • 2 or 3 ripe mangos, diced
  • A touch of honey or sweetener of choice, to taste

How To Make

  • Puree mango in the blender with 1/4 cup of the coconut milk, add honey, and blend until smooth and creamy. Taste and adjust the sweetness if needed.
  • In a separate bowl, combine the remaining coconut milk and the honey; mix well until combined thoroughly.
  • Pour about 2 tablespoons of mango puree into each popsicle mold, then pour the coconut milk. Mix until all the molds are filled.
  • Place the molds in the freezer and freeze until solid, about 5 to 6 hours.
  • Release the ice pops from the molds and enjoy immediately, or wrap the frozen pops individually in parchment paper and store them in an airtight container to keep them fresh.
